Stuffed Cabbage Leaves | Divalicious Recipes

Since I cannot get grape leaves, I will try my friend Dina's Dolmades recipe, substituting cabbage leaves for grape leaves....which includes:
I use a lot of fresh mint, about 3 cups chopped, plus several cloves
crushed garlic,1/2 cup  golden raisins and I broil an eggplant cut into
small cubes till brown. The eggplant gives a nice nutty flavor plus adds
body to the grape leaves. I also add dried mint to enhance the flavor
but I've never used dill although that would probably be good too. I
also cut the amount of olive oil almost in half as we don't care for
them dripping in oil as some recipes or store bought dolmades often call
for or have. Instead I add a small can of tomato paste to the filling mixture. Oh yes, keep the dried mint in as well for lots of flavor.
